Piri piri chicken breast and loads of greens. I burnt the chicken. Oooops

Again starting the day with a staple breakfast, I still have to force myself to eat before lunchtime and this is quick and easy so it suits. 
Out on the road for lunch, so ore packed chocked and beef jerky (one of my favs)
Couple of clementines mid afternoon :)

Gluten free sausages and lots of greens tonight. Delicious!

I'm running tonight with Regency Runners so itll be a late tea. Carrot and hummus to keep me going :)

Using up the last of the chicken skewers. I shall def make these again. Delicious!

This mornings breakfast, pretty much staple as its quick and high in protein, about 40g. 

Plus a lazy lunch as I'm in the office today


I'm off out for tea after work, so back to good choices whilst out with friends.

Tonight's tea!

Lemon and garlic chicken skewers. This was amazing, and enough for tomorrow too. It was also really easy, winner winner chicken dinner!! 

Recipe

2 Chicken breasts, cut into chunks 
I yellow pepper, 1 inch chunks
1 courgette, coined
1 red onion

Marinade 
Ex virgin olive oil
Juice and zest 1 lemon
2 cloves garlic, crushed
1 tbs Dijon mustard
Salt and pepper

Marinade all ingredients for 2 hours in a large bowl, covered in the fridge
Arrange into skewers, if wooden soak for 30 minutes beforehand
Grill for 10-15 minutes, turning regularly. 

Simple!! 

So why am I here

Ok, so the point of all this?

I need to start making myself accountable for my failings with my diet, as explained here. So rather than clog up my other blog or twitter feed with constant meal updates, you get to see it here!

The idea is simple, before I put anything in my mouth, I post a picture on here, I may also include recipe ideas from time to time, we shall see a) how bust I am and b) if I can be bothered!!
